I know it’s summer but we had so many veggies from CSA that something ahd to be done. So, I made a veggie soup that was chock full of healy stuff that tastes good too. Oh, and it totally works for you vegetarians out there so don’t be scared. Here’s how it went down:

  • 1 Large Onion – chopped coarsely
  • 4-6 Cloves of Garlic – I keep the pieces pretty big – do what you want here
  • 4 Celery Stalks – cut into pieces on the bias
  • 4 Medium Carrots – cut into pieces on the bias
  • 1/2 lb String Beans – cut into bite sized pieces
  • 1/2 Head Cabbage – thick julienne cut
  • 1/2 Head Red Cabbage – thick julienne cut (the red adds a nice color)
  • 2 Medium Zucchini’s of your choice – cut into bite sized pieces
  • 1 28oz. Can Whole Tomatoes – I like to crush the tomatoes by hand
  • 2 Cans of water (use the can from the tomatoes)

Saute the onions, garlic, celery, and carrots in a large pot with some olive oil. Add some salt to sweat. once the onions go clear and the carrots start to soften add the tomatoes with the juice from the can plus two cans of water. Bring this to a simmer and let it go for about 10 minutes. Add the cabbage and string beans. Once all the veggies seem soft enough add the zuke’s – they take the least amount of time. Salt & Pepper to taste. Of course, you can add whatever other veggies or even beans that your heart desires. you can also puree the whole thing for a smooth tomato & veggie soup. Good stuff either way. See what I mean?

Veggie Soup
